Citric Acid

Citric acid got its name more than 200 years ago when it was first made from lemon juice. It is believed that it was known earlier but under a different name.

Originally Citric acid was obtained from citrus fruits. Today, it is produced industrially by fermentation of raw materials containing sugar, such as corn. Molds (Aspergillus Niger) are used for fermentation.

In USA and China, genetically modified variants (GMO) of the mold can be used, but this is not permitted in Europe.

Citric acid is a very water-soluble powder, which occurs in the forms anhydrous (= anhydrate) and with a water molecule (= monohydrate). Citric acid salts and esters are named Citrates.

In food, Citric acid and citrates are used as E330. They serve as preservatives, acidity regulators and flavor enhancers.
