Citric acid got its name more than 200 years ago when it was first made from lemon juice. It is believed that it was known earlier but under a different name.
In USA and China, genetically modified variants (GMO) of the mold can be used, but this is not permitted in Europe.
Citric acid is a very water-soluble powder, which occurs in the forms anhydrous (= anhydrate) and with a water molecule (= monohydrate). Citric acid salts and esters are named Citrates.
In food, Citric acid and citrates are used as E330. They serve as preservatives, acidity regulators and flavor enhancers.
